These desserts are all about simplicity and splendid flavour.

Aboard our luxury train journeys, all our desserts are crafted by exceptionally talented chefs and offer a world of taste you may never have experienced before. Some what advanced and perhaps a little tricky for one to try at home, a journey aboard a luxury train is the ideal setting to experience such flavours. While aboard, not only will you take in the beautiful scenery, indulge in glorious cuisine and enjoy some exceptional beverages, but depending on your journey, you may also be treated to some of the most exceptional desserts in the world.

For these desserts we keep things simple, most ingredients you may already have or can order from your favourite supermarket. These desserts all focus on indulgence while keeping things as simple as possible, because less time spent preparing is more time available for enjoying!

Coffee Ice Cream Terrine

Requiring just five ingredients, this flavoursome dessert offers intense dark chocolate and coffee overtones. Simple to make, in around 20 minutes you’ll have yourself a large dessert that is ideal for serving to many people, or enough to go back for seconds. The only downside is a 2 hour wait while your dessert freezes, but for the intense taste it’s completely worth the wait. The perfect pudding for making on a Saturday morning and enjoying throughout the weekend and into the week.


• 300g vanilla ice cream
• 3300g coffee ice cream
• 31 tbsp vegetable oil
• 3300g dark chocolate
• 350g coconut oil
• 350g honeycomb or Maltesers crushed


Leave the ice creams out at room temperature to soften slightly. Find yourself a loaf tin and brush with the vegetable oil before lining with cling film. Crush your dark chocolate and along with your coconut oil, melt together either in the microwave or in a heat-proof bowl above some simmering water. Allow to melt then set aside.

Spoon half of your coffee ice cream into the loaf tin and smooth to ensure a flat layer. Then add a layer of your melted chocolate on top before adding a layer of vanilla ice cream. Keep adding layers in this order before you reach the top of your loaf tin and ensure you finish with a layer of chocolate sauce. Cover with clingfilm and freeze for 2 hours or more.

Remove the terrine from the tin, melt the remaining chocolate, drizzle on top and add crushed honeycomb, Maltesers or whatever you may have on top.

Lemon Cheesecake

Exceptionally impressive in appearance and taste but deceptively easy to make. Requiring a little baking and some finesse, this dessert is forgiving and allows one to mix and match ingredients as one may like. Once you are comfortable making this dessert, you can quite easily replace ingredients and adjust flavours with minimal changes to the recipe, such as swapping the lemon for lime, orange or any other zesty fruit. A perfect dessert to enjoy over a day or two and one that will fill your home with a wonderful fragrance while baking.


• 225g digestive biscuit
• 100g melted butter
• 250g tub mascarpone
• 600g soft cheese
• 2 eggs plus 2 additional yolks
• 3 lemon zests
• 1 lemon juiced
• 4 tbsp plain flour
• 175g caster sugar

For the topping:
• Half a 284ml pot of soured cream
• 3 tbsp lemon curd


Heat your oven to 180 degrees, 160 degrees if using a fan oven or gas mark 4. Line the bottom of a circular 23cm tin with greaseproof paper. Melt your butter and add along with the biscuits into a food processor. Finally compact the mixture into the bottom fo the tin and chill.

Whisk all of the other ingredients into a bowl until combined and poor over the biscuit base. Bake for around 40 minutes until the mixture has a slight wobble. Turn off the oven but leave the cake inside until the oven has cooled. Once cool, remove the tin from the oven and the cake from the tin and top with soured cream before swirling the lemon curd on top of the cream.

Hot Mocha Liqueurs

In under 10 minutes you could prepare a fresh and warm dessert that really hits the spot. A splash of liqueur isn’t required but certainly adds an extra something. Requiring nothing more than a microwave and a few ingredients, these miniature desserts are not only very easy to make but very easy to eat, not too dense or heavy but definitely satisfying. With something this simple, one can easily modify the method to one’s own taste, adding or removing ingredients to taste.


• 150ml milk
• 150g soft butter
• 1 large egg
• 2 tsp instant coffee
• 50g icing sugar
• 50g ground almonds
• 2 tbsp cocoa
• 1 tbsp self-raising flour
• 4 tsp coffee liqueur


Blend the milk and coffee in a food processor before adding the butter, egg, almonds, coca and flour. Blend again until the mixture thickens. Then simply scrape the mixture evenly into ramekins. Place into a microwave and heat for 6 minutes on medium. Once done, leave to stand for around 5 minutes before adding a drizzle of coffee liqueur. If you feel like cooling things down even further, accompany with a scoop of ice cream if you wish.

These desserts may not be as incredible to look at or indeed taste as the one’s aboard our luxury trains, but they do offer a quick and easy way to enjoy something sweet at home with ease.
